Ingredients
Prepare the Pineapple
1/2 Pineapple
1 tsp. Sugar and 1/2 tsp. Sugar
Prepare the Eggs
2 Eggs
1 Tbsp. Oil
Prepare the Shrimp
Season the Shrimp
10 Shrimp
1/2 tsp. Sugar
1/4 tsp. Salt
1/2 tsp. minced Garlic
Cook the Shrimp
1 Tbsp. Olive Oil
1 Tbsp. minced Garlic
Seasoned Shrimp
1/4 tsp. Turmeric
1/2 cup chopped Green Bell Pepper
1/2 cup chopped Red Bell Pepper
Fried Rice
3 cups cooked Rice
1 Tbsp. Olive Oil
1 Tbsp. minced Garlic
1/4 tsp. Sugar
1/4 tsp. Mushroom Seasoning
2 tsp. Fish Sauce
some chopped Green Onions
Cut the Pineapple, you only need 1/2. Then cut into bite size pieces. Place into a bowl, add in 1 tsp. Sugar and mix well. Cover and set aside for 15 minutes. After 15 minutes, cook the pineapple on medium heat. Add in 1/2 tsp. Sugar. Let it cook until it turns translucent. Remove from heat and set aside.
Beat 2 Eggs in a small bowl. Add 1 Tbsp. Oil into a pan. Add in the egg. Make sure it makes an even thin layer. Let it cook, once it’s done. Remove from pan and cut into strips. Then set aside.
Place 10 Shrimp in a bowl to season the shrimp. Remember to devein and remove the shell. Add in 1/2 tsp. Sugar, 1/4 tsp. Salt and 1/2 tsp. minced Garlic. Mix and set aside for 15 minutes. After 15 minutes, add in 1 Tbsp. Olive Oil into a pan. Then add in 1 Tbsp. minced Garlic. Saute for a few seconds and add in the Shrimp. Cook on medium heat, until the Shrimp turns pink. Add in 1/4 tsp. Turmeric and add in 1/2 cup chopped Green Bell Pepper. Add in 1/2 cup chopped Red Bell Pepper and mix. Cook for 2 minutes and remove from heat and set aside.
In a large pan or wok, add in 1 Tbsp. Olive Oil and 1 Tbsp. minced Garlic. Saute for a few seconds. Then add in 3 cups 1 day old cooked Rice. Break it apart, while having the heat on medium-high. Add in the cooked shrimp with bell pepper, eggs, some chopped Green Onions and pineapple. Mix and toss the ingredients. Then add in 1/4 tsp. Sugar, 1/4 tsp. Mushroom Seasoning and 2 tsp. Fish Sauce. Mix well for 2-3 minutes and serve. Enjoy.
