Zucchini Stir-fry Egg (Bí ngòi xào trứng) Recipe



Ingredients
1 lb. Zucchini 
2 Eggs
1 tsp. Sugar
1/2 tsp. Salt
1/2 tsp. Mushroom Seasoning
Ground Black Pepper
2 Green Onions
3 Garlic Cloves (minced)
1 Tbsp. Olive Oil

Seasoning the Eggs
Pinch of Salt, Mushroom Seasoning and Ground Black Pepper

Rinse and wash the 1 lb. Zucchini and 2 Green Onions.  Cut the Zucchini into long strips about 2 inches long.  Chop the Green Onions, separate the white and the green. 

Crack 2 Eggs.  Add in a pinch of Salt, Mushroom Seasoning and some Ground Black Pepper.  Beat the Eggs and set aside. 

In a pan, add in 1 Tbsp. Olive Oil, 3 minced Garlic Cloves and the white section of the chopped Green Onions.  Saute until slightly brown and add in the Zucchini.  Cook on medium heat for 1-2 minutes.  Then add in 1 tsp. Sugar, 1/2 tsp. Salt and 1/2 tsp. Mushroom Seasoning. Stir well, continue to cook on medium heat until the zucchini wilt  a little.  Add in the egg mixture evenly across the zucchini. Then add in the chopped Green Onions and some Ground Black Pepper.  Let it cook for about 1-2 minutes and then flip it over.  Cook the other side for another 1-2 minutes or until you see the eggs are fully cooked.  Remove from heat and enjoy.
