Claypot Braised Salmon (Cá Hồi Kho) Recipe

 Ingredients
Marinate
1/2 lb. Salmon
1 tsp. minced Garlic
1 tsp. Sugar
2 tsp. chopped Shallots
1 Tbsp. Fish Sauce
1/2 tsp. Ground Black Pepper
1/4 tsp. Dark Soy Sauce

Cooking in claypot
Green Onions
1 1/2 tsp. Olive Oil
1 tsp. chopped Shallots
Chili Pepper
Ground Black Pepper
1 Tbsp. Fish Sauce
1 Tbsp. Sugar

Rinse 1/2 lb. Salmon and cut into smaller pieces. Marinate the Salmon.  Add 2 tsp. chopped Shallots,1 tsp. minced Garlic, 1/4 tsp. Dark Soy Sauce,  1 Tbsp. Fish Sauce, 1 tsp. Sugar and 1/2 tsp. Ground Black Pepper. Let it marinate for at least 30 minutes.

In a claypot, add in 1 1/2 tsp. Olive Oil. Add in 1 tsp. chopped Shallots.  Add the marinated Salmon.  Let it simmer on medium heat.  Add 1 Tbsp. Fish Sauce. Continue to let it simmer. Remember to turn the fish so it can cook evenly. Add 1 Tbsp. Sugar. Once it’s done add in chopped Green Onion, Chili Pepper and Ground Black Pepper.  Serve with rice and enjoy.
