Ingredients
Pickled Daikon in Fish Sauce
1 Daikon
2 tsp. Kosher Salt
3/4 cup Water
1/4 cup Fish Sauce
3 Tbsp. Sugar
Chili Pepper
3 Garlic Cloves
Cut 1 Daikon (about 2 inches). Peel and rinse with water. Then cut into smaller pieces (length about 2 inches width about half an inch). Place in a bowl and mix with 2 tsp. Kosher Salt. Let it sit for 1 hour.
After 1 hour drain out the water and place the Daikon in a colander. Place outside in the sun to let it dry. Wait for the Daikon to shrink in half. Rinse with water, drain out the water and set aside.
In a sauce pan add in 3/4 cup Water, 1/4 cup Fish Sauce and 3 Tbsp. Sugar. Mix well, bring to a boil and remove from heat. Set aside to cool.
Cut 1 Chili Pepper and mince 3 Garlic Cloves. Mix in with the Daikon. Place in a jar and pour in the Fish Sauce mixture. Sealed with lid, it should be ready after 3 days.
After 3 days you can enjoy the Pickled Daikon.
You can use the Pickled Daikon to make Stir-fry pickled
Daikon with Soy Sauce.
To make Stir-fry Pickled Daikon you’ll need.
Stir-fry Pickled Daikon Recipe
2 tsp. Soy Sauce
1 1/2 tsp. Sugar
1 cup Pickled Daikon
1 Tbsp. Olive Oil
1 Tbsp. minced Garlic
In a pan, add in 1 Tbsp. Olive Oil and 1 Tbsp. minced Garlic. Saute for a few seconds. Add in 1 cup Pickled Daikon, 2 tsp. Soy Sauce and 1 1/2 tsp. Sugar. Mix well on medium heat. Mix well on medium heat. Remove from heat and enjoy. This is a salty dish, enjoy with congee or plain rice.
