Steamed Vietnamese Egg Meatloaf (Chả trứng hấp) Recipe

 


Ingredients

1 cup minced Dried Shrimp 
7 oz. minced Pork
1/2 cup minced Wood Ear Mushroom
1/2 cup chopped Garlic/Shallots
1 cup chopped Green Onions
2 tsp. Sugar
1/2 tsp. Salt
1 tsp. Mushroom Seasoning
1 cup chopped Bean Thread
1/2 tsp. Chili Powder
1/2 tsp. Ground Black Pepper
1 1/2 Tbsp. Annatto Seed Oil
4 Eggs


Place 7 oz. minced pork in an aluminum pan.  Add in 1 cup finely chopped Dried Shrimp, 1/2 cup Wood Ear Mushroom, 1/2 cup chopped Garlic/Shallots, some chopped Green Onions, 2 tsp. Sugar, 1/2 tsp. Salt, 1 tsp. Mushroom Seasoning, 1 cup Bean Thread, 1/2 tsp. Chili Powder, 1/2 tsp. Ground Black Pepper, 1 1/2 Tbsp. Annatto Seed Oil, 4 Eggs (save the last yolk to spread on the  top later) and mix.  Add the rest of the chopped Green Onions on top.  You can add in some Annatto Seed Oil in with the Yolk to help it look more orange/red. Have your steamer ready.  Steam for 1 hour and 30 minutes.  When it’s about to be done, spread the yolk on the top of the meatloaf.  Continue to let it steam for a few more minutes and remove from steamer.  Enjoy with meal!
