How to make Vietnamese Multipurpose Meat Paste (Cách Làm Giò Sống) Recipe

 


Ingredients

1 lb. Pork Lion
1 Tbsp. Garlic Powder
1/2 tsp. Kosher Salt
1 Tbsp. Tapioca Starch
2 tsp. Fish Sauce
1/2 tsp. Baking Powder
1/4 cup Canola Oil
1 Tbsp. Olive Oil
1/2 cup Crushed Ice

Cut 1 lb. Pork Lion into small pieces.  The meat needs to be semi frozen. Place it in the food processor for a few minutes.  Cover the meat with plastic wrap and place it in the freezer for about 15 minutes.  After 15 minutes, take it out of the freezer.  The meat should be icy cold. Add in 1 Tbsp. Garlic Powder.  Add 1/2 tsp. Kosher Salt.  Add 1/2 tsp. Baking Powder.  Add 1 Tbsp. Tapioca Starch.  Add 2 tsp. Fish Sauce.  Add 1/4 cup Canola Oil.  Turn on food processor for a few minutes. Cover with plastic wrap and place in freezer again for 15 minutes. After 15 minutes, add in 1 Tbsp. Olive Oil.  Add in 1/2 cup Crushed Ice.  Turn on food processor for a few minutes. Place in the freezer again for 15 minutes.  After 15 minutes, remove from freezer and turn on food processor.  The meat paste should look pale and bouncy.  Meat is ready to use in other dishes.
