Ingredients
2 lb. Periwinkle Snails
2 Lemongrass Sticks (more if needed)
1 tsp. Kosher Salt
1/2 cup Water
Dipping Sauce
1 Lime
2 Thai Chili
4 tsp. Sugar
2 Cloves
4 tsp. Fish Sauce
Add in 1 tsp. Kosher Salt in a 2 lb. Periwinkle Snails bowl with water. Mix and let it soak in the salted water for 1 hour. After 1 hour, rinse the Periwinkle Snails. Set aside for a few minutes.
Prepare the steamer. Fill some water (about 1/2 cup) on the bottom of the steamer and add in some lemongrass. Place some lemongrass on the top steamer and pour in the Periwinkle Snails. Steam on high heat for 3 minutes and remove from heat.
To make the dipping sauce, minced 2 cloves and 2 Thai Chili. Place in a small bowl. Squeeze 1 Lime into bowl. Add in 4 tsp. Sugar. Add 4 tsp. Fish Sauce. Mix well.
Serve the Periwinkle Snails with the Dipping Sauce and enjoy!
