Ingredients
1 Bitter melon
1 Red Bell Pepper
Water and Ice
1 tsp. Sugar
1/2 Onion
10 Shrimp
Pinch of Salt
1 tsp. minced Garlic
Crispy Fried Shallots
Crush Roasted Peanuts
1 cup chopped Vietnamese Mint
Dressing Ingredients
1 Tbsp. Fish Sauce
2 Tbsp. Lime Juice
3 Tbsp. Sugar
some chopped Chili Pepper
Rinse 1 Bitter melon and 1 Red Bell Pepper. Then cut the Bitter melon and remove the center. Cut thin slices of the bitter melon, you can use a peeler or a knife. When you’re done, have a bowl with water and ice ready. Add in 1 tsp. Sugar. Mix well, and add in the bitter melon. Set aside for 15 minutes. After 15 minutes, drain out the water and set aside. Cut 1 Red Bell Pepper into slices and set aside. Cut 1/2 of an Onion and set aside.
Cook 10 Shrimp, using a pan add in 2 Tbsp. Water, shrimp, a pinch of Salt and 1 tsp. minced Garlic. Wait for it to turn pink and remove from heat and remove the shell. Then set aside.
Squeeze 1 Lime and set aside. In a small bowl, add in 1 Tbsp. Fish Sauce, add 2 Tbsp. Lime Juice, 3 Tbsp. Sugar and some minced Chili Pepper. Mix well.
Now drain out any extra water from the Bitter Melon. Place it into a large bowl. Add in the Red Bell Pepper, Onions, Shrimp, dressing, Crispy Fried Shallots, some crush Roasted Peanuts and about 1 cup chopped Vietnamese Mint, mix well and enjoy.
