Tomato Egg Stir-fry (Trứng gà xào cà chua) Recipe


Ingredients

Egg Mixture Ingredients:
3 Eggs
1 tsp. Mushroom Seasoning
1/4 tsp. Salt
1/2 tsp. Ground Black Pepper
1/2 tsp. Sugar

Stir-fry Ingredients
1 lb. Tomatoes
3 Tbsp. Olive Oil
1 Tbsp. minced Garlic
1/4 cup Onion
Egg Mixture
1 cup chopped Green Onions
1 tsp. Sugar
1/4 tsp. Salt
1 tsp. Mushroom Seasoning

Wash and rinse 1 lb. Tomatoes. Cut the tomatoes in half and remove the seeds. Then remove the core and cut into smaller pieces.  Set aside. 

Prepare the egg mixture.  In a small bowl, add in 3 Eggs. Add in 1 tsp. Mushroom Seasoning, 1/4 tsp. Salt, 1/2 tsp. Ground Black Pepper and 1/2 tsp. Sugar. Beat the eggs and set aside. 

In a pan, add in 3 Tbsp. Olive Oil. Add 1 Tbsp. minced Garlic and 1/4 cut Onion.  Sautéed on medium heat for a few seconds. Then add in the Tomatoes. Wait until the tomatoes start to soften a little bit. Add in some chopped Green Onions, 1 tsp. Sugar, 1/4 tsp. Salt and 1 tsp. Mushroom Seasoning.  Stir for a few seconds.  

Once the tomatoes are fully soften.  Pour in the Egg mixture and add in the rest of the Green Onions. Cover with the lid on medium heat and let it cook. Once you see the eggs on top are fully cooked.  Open the lid and add in some Ground Black Pepper.  Enjoy with your meal.
