Ingredients
2 Green Papayas
1 1/2 tsp. Salt
1/2 cup crushed Peanuts
1 cup Beef Jerky
2 Tbsp. Lime Juice
2 Tbsp. minced Chili Pepper with Garlic
2 Tbsp. Sugar
2 Tbsp. Fish Sauce
2 cups Vietnamese Mint
Peel and cut 2 Papayas. Rinse with water and cut into strips. Place in a large bowl and add in 11/2 tsp. Salt. Mix well. Rinse with water. Drain out the water.
Mix 2 Tbsp. Lime Juice, 2 Tbsp. Sugar, 2 Tbsp. Fish Sauce and 2 Tbsp. minced Chili Pepper with Garlic.
Cut 1 cup Beef Jerky into small pieces.
In a large bowl add in the Papaya, crushed Peanuts, Beef Jerky, 2 cups chopped Vietnamese Mint and Fish Sauce mixture. Mix well and serve. Enjoy!
