Ingredients
1/2 lb. Anchovy
chopped Shallots
minced Garlic
2 Tbsp. Olive Oil
1/2 tsp. Mushroom Seasoning
1 tsp. Ground Black Pepper
Pork Belly
2 Tbsp. Fish Sauce
3 tsp. Sugar
Green Onions
1/2 tsp. Dark Soy Sauce
Pinch of Salt
3-5 Tbsp. Water
Thai Chili Pepper (Optional)
Cut some Pork Belly into small pieces. Add in some water with a pinch of Salt and 1 tsp. minced Garlic. Let it simmer until all the water has been absorbed. Place in a bowl and set aside.
Rinse 1/2 lb. Anchovy and set aside.
Add 2 Tbsp. Olive Oil. Add in 1 Tbsp. minced Garlic and 1 Tbsp. chopped Shallots. When it’s golden remove from heat and set aside.
Pour in the Anchovy in a claypot. Add 1 tsp. minced Garlic and 1 tsp. chopped Shallots. Add Green Onions and 2 Tbsp. Fish Sauce. Add 3 tsp. Sugar. Add 1/2 tsp. Mushroom Seasoning. Add 1/2 tsp. Dark Soy Sauce. Add 1 tsp. Ground Black Pepper. Mix. Add in the sautéed Garlic/Shallots. Add in the Pork Belly. Add in 3-5 Tbsp. Water and cook on medium heat. Let it simmer for about 5-7 minutes. Add in some chopped Green Onions and Ground Black Pepper. Remove from heat and serve with meal. Add Thai Chili Pepper (Optional) and enjoy!
