Ingredients
1 Tbsp. minced Ginger
8 oz. Tamarind
2 cups Hot Water
1/2 cup Sugar
1 Tbsp. Fish Sauce
1 Tbsp. minced Garlic
Thai Chili Pepper
2 Tbsp. Olive Oil
Place 8 oz. Tamarind in a bowl. Pour in 1 cup Hot Water. Set aside for about 10 minutes.
Minced some Garlic. Then minced some Ginger.
Mush the Tamarind, remove the seeds. Place it in a different bowl, add in 1 cup Hot Water. Mush the seeds around. Pour using a strainer into the other bowl.
Add in 2 Tbsp. Olive Oil. Add in 1 Tbsp. minced Garlic and 1 Tbsp. minced Ginger. Saute for a few seconds. Add in 1 Tbsp. Fish Sauce. Add 1/2 cup Sugar. Mix on medium heat. Add in some chopped Thai Chili Pepper. When it starts to simmer. Add in the Tamarind. Bring to a high simmer. Remove from heat and set aside.
Let it cool and place in a jar to use in other recipes. Use within one month.
