Ingredients
2.5 lb. Pork Belly
Lime Juice
Salt
Shallots
Ginger
Annatto seed oil
Marinate Sauce:
1 Ginger Knob
1 Shallot
1/2 tsp. Salt
2 Tbsp. Soy Sauce
1/2 tsp. Five Spice Powder
1 tsp. Sugar
1 tsp. Mushroom Seasoning
1/2 tsp. Ground Black Pepper
1 tsp. Annatto seed oil
Cut Limes into slices. Sprinkle salt on the skin of 2.5 lb. Pork Belly. Squeeze the Lime juice on the skin and rub the salt into the skin. Rinse with water.
Boil some water in a pan and add in some Salt. Add in the Pork Belly. Add in some Shallots and Ginger slices. Let it boil for about 15 minutes. Take it out and set aside.
Chop 1 Ginger knob and 1 Shallot. Place in a bowl. Add in 1/2 tsp. Salt. Add 2 Tbsp. Soy Sauce. Add 1/2 tsp. Five Spice Powder. Add 1 tsp. Sugar. Add 1 tsp. Mushroom Seasoning. Add 1/2 tsp. Ground Black Pepper. Add 1 tsp. Annatto seed oil. Mix well.
Pat dry the skin of the Pork Belly. Flip it over and cut slits into the meat. Spread the marinate sauce all over the meat section. Flip it over to the skin. Use a sharp metal piece such as a fork or a corn skewer. Poke the skin. Mix some Lime Juice with Salt. Spread it onto the skin. Then add some Annatto seed oil on top.
Place in Air Fryer, skin facing down. Set at 10 minutes at 370 degrees F. After 10 minutes, flip the Pork Belly so the skin is facing up. Poke the skin and spread some lime juice with salt. Cook in the Air Fryer until golden. The time depends on your Air Fryer.
