Curry Fried Rice with Shrimp (Cơm chiên cà ri tôm) Recipe

 


Ingredients
9 Large Shrimp
1 tsp. minced Garlic
1 tsp. chopped Shallots
1/2 tsp. Oyster Sauce
1/4 tsp. Ground Black Pepper
Pinch of Mushroom Seasoning
1 tsp. Soy Sauce
2 cups one day old Rice
1 Tbsp. Curry Oil
1 Tbsp. Olive Oil
minced Garlic 
chopped Shallots
chopped Green Onions
1 tsp. Mushroom Seasoning
1 tsp. Soy Sauce
1 tsp. Sugar
Cilantro
Tomato
Cucumber

Clean and peel 9 large Shrimp. Optional, cut into cubes or leave as is.  Place in a bowl.  Add in 1 tsp. minced Garlic, 1 tsp. chopped Shallots, 1/2 tsp. Oyster Sauce, 1/4 tsp. Ground Black Pepper, Pinch of Mushroom Seasoning and 1 tsp. Soy Sauce.  Mix well, cover and set aside for 15 minutes. 

Place 2 cups of old rice into a bowl.  Add in 1 Tbsp. Curry Oil.  Mix well and set aside. 

In a pan, add in 1 Tbsp. Olive Oil.  Add in some minced Garlic and chopped Shallots. Saute for a few seconds.  Add in the marinated Shrimp.  Stir and then add in some Green Onions. Add in the Rice with Curry Oil. Add in 1 tsp. Mushroom Seasoning, 1 tsp. Soy Sauce, 1 tsp. Sugar and stir on medium high heat. When it’s almost done add in some chopped Green Onions and some Cilantro. Remove from heat.  Serve on a plate, optional add some tomato and cucumbers.  Enjoy.
