Steamed Fish (Ca Hap) Recipe


Ingredients
Bass Fish 
Ginger
Green Onion
Salt
Black Pepper
Rice white cooking wine
Cilantro
Hot Peppers

Sauce
2 Tbsp. Oyster sauce
2 Tbsp. Soy sauce
1 tsp. Sesame Oil
1 Tbsp. minced Garlic
1 Tbsp. Olive Oil
1 tsp. Sugar
1 Tbsp. Rice white cooking wine

Cut some Ginger and Green Onion.

To clean fish rinse with water, rub some salt onto fish.  Scrub it and rinse with some water again.  Rinse with some Rice white cooking wine.  This method prevent the fish from having a fishy smell.

Let it dry for a bit and cut slits into the fish (both sides). Sprinkle some salt and pepper inside and outside the fish.  Stuff some ginger strips and onion inside fish.  Add some on top as well.

Place in steamer to steam for 5 minutes. Remove from steamer, drain out the water and remove the ginger and onion.

Put some new ginger and onion on top of fish, steam for 20 minutes or until fish is done. 

To make the sauce, in a pan add in 1 Tbsp. Olive Oil.  Turn on medium-low heat, add  1 Tbsp. minced garlic, saute for a few seconds and add in 2 Tbsp. Oyster sauce, 2 Tbsp. Soy sauce, 1 tsp. Sesame Oil, 1 tsp. Sugar and 1 Tbsp. Rice white cooking wine.  Mix well, remove from heat.

When the fish is done, remove from steamer, place on serving plate.  Pour on the sauce.  Garnish with some onion and cilantro.  Serve with meal.
