Raspberry Madeleines (Banh Con So Raspberry) Recipe

3/4 cup Cake Flour
3 Tbsp. unsalted Butter
3 Eggs
1/2 cup Sugar
Pinch of Salt
1 tsp. Vanilla Sugar or Extract
1/2 tsp. Baking Powder
1/2 cup Raspberry Puree 

Optional for decoration:
Frosting and pearl sprinkles 

Puree 1/2 cup Raspberry, add a bit of water.  Separate 3 Eggs.
Beat the Egg Whites, add 1/2 cup Sugar and 1 tsp. Vanilla Sugar.
Beat until stiff peaks. Set aside.

Add in 3 Tbsp. unsalted Butter into the Egg Yolks. Add in 1/2 cup Raspberry Puree and mix.  Sift in 3/4 cup Cake Flour, mix and add in 1/2 tsp. Baking Powder. Fold in the Egg Whites.

Grease madeleine baking pan and pour batter.  Bake at 350 degrees F for about 10-15 minutes or until toothpick comes out clean. 

Remove from oven and place on cooling rack.  Optional, decorate with frosting and pearl sprinkles.
