Kumquat Marmalade Recipe

1.5 lb Kumquat
4 cups Sugar
1 1/4 cup Orange Juice
1 tsp. Vanilla Sugar or Extract

Cut and remove seeds from 1.5 Kumquat.
Add in 1 1/4 cup Orange Juice, process until smooth or with small chucks. Add 4 cups Sugar and 1 tsp. Vanilla Sugar or Extract.  
Mix well. Cover with plastic wrap, leave overnight. 
Next day bring to a medium high simmer and down to a medium simmer, cook for 15 minutes.
Let it cool completely before pouring into glass jar.  Place in refrigerator to use, last about 1 month.
