Coconut Macaroons (Banh Dua Nuong) Recipe Cookies

Coconut Macaroons (Banh Dua Nuong)

1 1/2 cup Sweetened Coconut Flakes
1 Egg White
1/4 cup Sugar
1 tsp. Vanilla Sugar
Pinch of Salt

In a bowl beat 1 Egg White.  Add a Pinch of Salt.  Then add in 1/3 cup Sugar.  Add 1 tsp. Vanilla Sugar.
Continue to beat until it stiffens.  Fold in 1 1/2 cup Sweetened Coconut Flakes.
If you are using unsweetened Coconut Flakes, remember to add more sugar.  Once it's evenly mix, using a tablespoon,
scoop it into round balls. Place on a baking sheet with parchment paper.  After you're done, sprinkle some coconut flakes on each balls.
make sure to cover it completely with coconut flakes.
Bake in the oven at 325 degrees F for about 20-30 minutes or until golden.
