Snow Fungus with Papaya Desserts Sweet Soup (Che Nam Tuyet Du Du)

Che Nam Tuyet Du Du (Snow Fungus with Papaya Desserts Sweet Soup)

1 Snow Fungus
8 Red Dates
1/2 Hawaiian Papaya
3 cups Water (add more as needed)
40g Rock Sugar or to taste

Soak the Snow Fungus in warm water until it expands and soften.  Cut and remove the center.  Then cut into small pieces.
Cut 1/2 of a Papaya into small chucks and set aside.

Using a clay pot, boil 3 cups Water.
Add in the Snow Fungus, let it simmer for about 30-40 minutes. Add more water as needed. Add 40g of Rock Sugar or to your taste. Wait for it to dissolve.
Then add in about 8 Red Dates, let it boil for about 10 minutes and add in the Papaya.  Let it simmer for another 10 minutes or until the Papaya are cooked.
Remove from heat and serve hot or cold.
