Madeleine Recipe Pandan Flavor (Banh Con So La Dua)
1/4 cup Almond Flour
1/2 cup Cake Flour
1/2 tsp. Baking Powder
2 tsp. Vanilla sugar
1/2 cup Sugar
5 tbsp. unsalted Butter
1/2 tsp. Pandan Extract
Beat 2 Eggs, add Pinch of Salt. Add 2 tsp. Vanilla Sugar. Add 1/2 tsp. Baking Powder. Add 1/2 cup Sugar.
Slowly add in 1/2 tsp. Pandan Extract. Fold in 5 Tbsp. unsalted Butter, remember to melt it before adding it in.
Fold in 1/2 cup Cake Flour little by little, you will need to sift it before adding it in. Sift 1/4 cup Almond Flour and fold it into batter.
Spread some butter onto the mold. Fill each mold about 3/4 full. Give it a quick tap before putting it in the oven.
Bake at 350 degrees F for 10-14 minutes or until the edge starts to turn brown.
Let it cool and serve.
