Canh Cai Be Xanh Nau Tom (Vietnamese Mustard Greens Soup with Shrimp)




Canh Cai Be Xanh Nau Tom (Vietnamese Mustard Greens Soup with Shrimp)
Ingredients:

1 bunch Mustard Greens
7 Shrimp
2 Tbsp. Dried Shrimp
chopped Green Onions
1 Tbsp. minced Garlic
1 Tbsp. Oil
4 cups Water
1/2 tsp. Salt
1/2 tsp. Sugar
1 Tbsp. Fish Sauce

Wash and rinse 1 bunch Mustard Greens.  Remember to cut the ends before washing them. Cut them shorter and set aside.
In a pan add 1 Tbsp. Oil and 1 Tbsp. minced Garlic.  Sauté until slightly brown.  Add 2 Tbsp. Dried Shrimp and 7 Shrimp. Remember to soak the Dried Shrimp in water before using and devein the 7 Shrimp.
Sauté until the Shrimp turn pink, remove from heat and set aside.
In a pot add 4 cups Water.  Add in the sautéed Shrimp and bring to a boil. Add 1/2 tsp. Salt. Add 1/2 tsp. Sugar
Add 1 Tbsp. Fish Sauce. Add the Mustard Greens.  Add some chopped Green Onions. Add some Black Pepper and serve.
