Ga Xao Xa Ot (Stir-fry Chicken with Lemongrass and Chili Pepper)


Ingredients:
2 Chicken Breasts
1 cup Lemongrass
Dried Chili Pepper
1/2 cup Ginger (cut into strips)
1/2 cup minced Garlic
1 Tbsp. Oyster Sauce
1/2 tsp. Turmeric Powder
1/2 tsp. Salt
1 tsp. Sugar
2 Tbsp. Oil
1 Tbsp. Fish Sauce
1 tsp. Sugar
2 Tbsp. Water
Black Pepper


Mince some Lemongrass you need about 1 cup. Put into a bowl and set aside.
Cut 2 Chicken Breasts into slices, put in a bowl and set aside.
To marinate the Chicken add 1/2 tsp. Salt. Add 1 tsp. Sugar. Add 1 Tbsp. Ginger.
Add 1 tsp. minced Garlic. Add 1 Tbsp. minced Lemongrass. Add 1 Tbsp. Oyster Sauce.
Cut 1 dried Chili Pepper and add into bowl. Mix well.  Cover with plastic wrap and let it marinate for about 1 hour.
In a pan add 2 Tbsp. Oil. Add in the rest of the minced Garlic and Ginger. Sauté for a few seconds.  Add in the Lemongrass.
Add 1/2 tsp. Turmeric Powder. Mix well. Add in the marinated Chicken. Add 1 Tbsp. Fish Sauce. Add 1 tsp. Sugar.
Continue to stir for a few minutes.  Add 2 Tbsp. Water. Once it's cooked add some Black Pepper.
You can add some more Chili Pepper.
