Sup Nui Ga (Vietnamese Chicken Soup)



Sup Nui Ga (Vietnamese Chicken Soup)




Ingredients


1 package of pasta (any kind)
1 Chicken Breast
2 Potatoes
2 Carrots
3 chopped Green Onions
2 minced Garlic Cloves
3 Tbsp. Oil
10 cups Water
2 tsp. Salt
1/2 tsp. Mushroom Seasoning
1/2 tsp. Sugar






Fill a large pot with some water.  Bring to a boil, add in your pasta. Boil for about 7 minutes or until soften.
Drain out the water and rinse with cold water. Then set it aside. Peel, wash, and cut 2 Carrots into pieces. Put it into a bowl and set aside.
Peel, wash, and cut 2 Potatoes into large chucks. Put in a bowl and set aside.  Mince 2 Garlic Cloves, set aside.  Cut the white section of 3 Green Onions and chop the rest.  Put in a bowl and set aside.
Remove the skin from the Chicken Breast. Then cut it into large chucks. Put in a bowl, rinse with water and drain out. Then set aside.
In a pan add in 3 Tbsp. Oil. Add in the minced Garlic. Saute for a few seconds. Add in the Chicken. Let it cook until slightly brown. Using medium heat, it takes about 5 minutes.
In a large pot add in 10 cups Water.  Add in the cooked Chicken. Let it simmer. Then add in the Carrots. Continue to let it simmer for 3-5 minutes. Remember to remove the foams.
Add in the Potatoes. Add in 2 tsp. Salt. Add in 1/2 tsp. Mushroom Seasoning. Add in 1/2 tsp. Sugar.
Continue to let it simmer.  Add in the stem of the Green Onions. Let it simmer for another 3-5 minutes.  Add in the chopped Green Onions and some Black Pepper.  Turn off heat.
To serve, in a large sauce pan add in the soup.  Then add in some pasta.  Using medium heat to warm it up your soup, you can also shred your Chicken.  Pour it into a bowl and serve.
