Dua Mon (Pickled Daikon and Carrot in Fish Sauce)
Ingredients
1 Daikon
1 Carrot
1 Hot Chili Pepper
3 Garlic Cloves
2 Tbsp. Salt
1/2 cup Sugar
1 cup Fish Sauce
Peel and cut 1 Daikon into 2 inch long pieces. Peel and cut 1 Carrot into 2 inch long pieces. Put in a large bowl, sprinkle 2 Tbsp. Salt and mix.
Leave it out in the sun to dry for about 3-4 hours. Another method is to leave it in an oven set at the lowest temperature for about 2-3 hours or until it becomes dry.
The Daikon and Carrot should have shrunk down a bit. Rinse with water and let it air dry for a few minutes. Slice 3 Garlic Cloves. Slice 1 Hot Chili Pepper.
In a bowl add in the Daikon, Carrot, sliced Garlic, and sliced Hot Chili Pepper. Mix well and set aside. In a sauce pan add in 1 cup Fish Sauce. Add in 1/2 cup Sugar. Bring to a boil and remove from heat. Let it cool.
Place the Daikon, Carrot, Garlic, and Hot Chili Pepper in a glass jar. Pour in the Fish Sauce mixture. Put a plastic wrap on top, then cover with the lid. It should be ready in about 2 days. After 2 days you can enjoy it with a slice of Sticky Rice Cake.
