Banh Tom (Vietnamese Shrimp and Sweet Potato Fritters)

Banh Tom (Vietnamese Shrimp and Sweet Potato Fritters)


1 Sweet Potato
1 cup Rice Flour
1/4 cup Shrimp Batter Mix
1/2 tsp. Salt
1/2 tsp.Turmeric Powder
1/2 tsp. Sugar
1 cup Water
5 Shrimp
Pinch of Salt and Sugar
Some Black Pepper
Frying Oil
Garlic Clove
Lettuce or Fresh Herbs
Dipping Fish Sauce

Peel and clean 1 Sweet Potato. Cut into long strips and put in a bowl, set aside. In a bowl add in 1 cup Rice Flour. Add in 1/4 cup Shrimp Batter Mix. Add in 1/2 tsp. Salt and Sugar. Add in 1/2 tsp. Turmeric Powder. Mix. Add in 1 cup Water. Mix well. Add in the Sweet Potato and mix. In a small bowl, add in 5 clean Shrimp. Add in a pinch of Salt and Sugar. Add some Black Pepper and mix. In a pan add in Frying Oil and 1 Garlic Clove. Using high-medium heat, wait for oil to form bubbles around the Garlic. Take some Sweet Potato Batter, place a Shrimp on top. Put in to fry. When it becomes crispy remove from oil and place on paper towel. Repeat until you use up all the batter and Shrimp. Serve with Lettuce or Fresh Herbs and Dipping Fish Sauce. To eat wrap the fritters with the Lettuce and dip into the Fish sauce.
