Vietnamese Caramelized Braised Pork and Eggs (Thit Kho)
2-3lbs Pork (cut into 2 inch long)
1 Fresh Coconut Juice
10-12 boiled Eggs
3 Tbsp. minced Garlic
3 Tbsp. Oil
5 Tbsp. Sugar
4 cups Water
1/2 cup Fish Sauce
In a pan add in 3 Tbsp. minced Garlic and 3 Tbsp. Oil. Saute until slightly brown.
Add in 2-3 lbs. Pork cut into 2 inch long. Stir-fry the Pork. Then add in 1 Tbsp. Sugar.
Continue to stir-fry. Pour 1 Fresh Coconut Juice into pan with the Pork. Let it simmer until it starts to caramelized.
Add in about 1/2 cup Fish Sauce. Continue to let it simmer. Add in 4 Tbsp. Sugar and mix.
When it starts to boil add in 4 cups Water. Add in 10-12 boiled Eggs. Let it simmer for 1 hr. Serve with rice.
