Pho Bo (Vietnamese Beef Noodle Soup)

Pho Bo (Vietnamese Beef Noodle Soup)

Ingredients
3 lbs. Beef Bone
2 bags Pho Spice
2-3 lbs. Beef
1 Ginger
1 Onion
1 package Beef Meatballs
2 packages Rice Noodles
Herbs
3 Limes
chopped Cilantros
1 Diced Onion
2-3 Jalapenos
chopped Green Onions
2 Tbsp. Fish Sauce
1 Tbsp. Sugar
2 Tbsp. Salt
1 tsp. Mushroom Seasoning

Boil the Beef Bones in water.  Once it is no longer pink, drain the water out and rinse the bones.
Clean out the pot and fill it with water again.  More than half way full. Put in the bones and bring to a boil.  Then let it simmer.
Add in two bags of Pho Spice. Continue to let is simmer.  Add into the broth 2-3 lbs of Beef.  While you let the broth simmer.  Roast 1 Ginger and 1 Onion.
Peel the burnt layer of the Onion and Ginger. Add Onion and Ginger into the broth. Add in Beef Meatballs inot the broth. Let it simmer for about 2 hours.
Remember to skim the foams. Add in 2 Tbsp. Fish Sauce or to taste.  Add 1 Tbsp. Sugar, 2 Tbsp. Salt, and 1 tsp. Mushroom Seasoning.
Put the Rice Noodles in boiling water.  Stir for 2-3 minutes.  Drain out and rinse with cold water.
Have your herbs ready.  Cut 3 Limes, chopped Cilantros, 1 Diced Onion, cut 2-3 Jalapenos, and chopped Green Onion.  Put in a bowl.
In a bowl put Rice Noodle and your garnishes.  Pour in the Beef Broth.  Eat with Hoison sauce and Hot Sauce.
