Fried Lemongrass Tofu with Bell Pepper (Đậu hũ chiên sả xào ớt) Recipe


Ingredients

Lemongrass Tofu
3/4 cup Lemongrass
1 tsp. minced Garlic
1 tsp. chopped Green Onions
1/4 tsp. Kosher Salt
1/2 tsp. Sugar
1/2 tsp. Mushroom Seasoning
1/2 tsp. Turmeric
3 Fresh Firm Tofu

Marinate Shrimp
7 Shrimp
1/2 tsp. minced Garlic
pinch of Sugar
pinch of Kosher Salt
pinch of Mushroom Seasoning

Stir-fry
1 Tbsp. Olive Oil
1 Tbsp. minced Garlic
1/4 tsp. Kosher Salt
1/4 tsp. Mushroom Seasoning
1/2 tsp. Sugar
1/2 Red Bell Pepper (cut into bite size pieces)
1/2 Green Bell Pepper (cut into bite size pieces)
chopped Green Onions
Fried Tofu and Lemongrass


Finely chop 2 Lemongrass sticks, you’ll need about 3/4 cup minced Lemongrass. Place the lemongrass in a bowl. Add in 1 tsp. minced Garlic, 1 tsp. chopped Green Onions, 1/4 tsp. Kosher Salt, 1/2 tsp. Sugar, 1/2 tsp. Mushroom Seasoning, 1/2 tsp. Turmeric and 1 chopped Thai Chili Pepper.  Mix well. 

Cut 3 Fresh Firm Tofu into small cubes.  Spread the lemongrass over the tofu. Cover and set aside for 15 minutes. After 15 minutes, pan fry the tofu.  When it’s golden, remove the tofu from the pan.  Drain the oil through a strainer, save the fried lemongrass. 

Place 7 Shrimp (devein and remove shell) in a bowl. Add in 1/2 tsp. minced Garlic, pinch of Sugar, pinch Kosher Salt and a pinch of Mushroom Seasoning. Mix well, and set aside. 

In a pan, add in 1 Tbsp. Olive Oil and 1 Tbsp. minced Garlic. Saute for a few seconds. Add in the Shrimp.  Add Red and Green Bell Pepper (cut in bite size pieces).  Stir for a few seconds, then add in 1/4 tsp. Kosher Salt, 1/4 tsp. Mushroom Seasoning and 1/2 tsp. Sugar. Mix well on medium heat. Add in chopped Green Onions, stir for about 2 minutes.  Then add in the Tofu and the Fried Lemongrass.  Mix well and serve.  Enjoy.
