1/2 cup Rice
1 Whole Corn or about 1/2 cup
1/2 cup Ground Pork
1 tsp. chopped Shallots
1 tsp. minced Garlic
1/2 tsp. Sugar
1/2 tsp. Salt
Pinch of Chicken Seasoning
Green Onions
Ground Black Pepper
5 cups Water
2 Tbsp. Olive Oil
In a pan, add in 2 Tbsp. Olive Oil. Add in 1 tsp. chopped Shallots and 1 tsp. minced Garlic. Saute for a few seconds and add in 1/2 cup Ground Pork. Cook on medium high heat until the meat is cooked.
In a pot, add in 1/2 cup Rice. Rinse a few times. Then add in 5 cups Water. Cook on medium high heat, let it simmer until the rice starts to break down. Once the rice starts to break down, add in the cooked Ground Pork. Continue to let it simmer.
Once congee has a consistency that you like, add in 1/2 cup Corn. Add 1/2 tsp. Sugar, a pinch of Chicken Seasoning and 1/2 tsp. Salt. Mix well.
Add in the chopped Green Onions and some Ground Black Pepper. Enjoy.
