Ingredients
2 Large Eggplants
2 Eggs
Bread Crumbs (about 1 cup)
All Purpose Flour (about 1 1/2 cups)
Ground Black Pepper
Salt
Frying oil
In a small bowl mix 2 Eggs, pinch of Salt and some Ground Black Pepper. Mix well and set aside.
Rinse the Eggplants. Fill a bowl with water and mix with some Salt. Cut the Eggplants into slices and place in the bowl.
Dip the Eggplant in the egg, flour and then the bread crumbs. Place into frying oil to fry until golden.
