Pineapple with Ginger and Peanuts Candy Recipe (Kẹo Khóm)


1 Pineapple
1 tsp. Salt
1 1/2 cup Sugar
1/4 cup Sesame Seeds
1/2 cup Ginger (cut into strips)
1/2 cup Roasted Peanuts

Cut 1 Pineapple into small pieces.  Place in a bowl, add 1 tsp. Salt and 1 1/2 cup Sugar.  Set aside for 1 hour.  Roast some Sesame Seeds about 1/4 cup. After 1 hour, cook the pineapple on the stove until translucent.  Add in 1/2 cup Ginger, 1/2 cup Roasted Peanuts and 1 Tbsp. Sesame seeds.  Mix well, pour onto parchment paper.  Flatten it out and let it cool.  Once it has cooled down, cut into small pieces and wrap.  Enjoy Candy.
