Marinate Chicken
2 Chicken Breasts
2 tsp. minced Garlic
2 tsp. chopped Shallots
1 tsp. Oyster Sauce
1 tsp. Sugar
Pinch of Ground Black Pepper
Cooking the dish
2 Tbsp. Olive Oil
2 tsp. minced Garlic
2 tsp. chopped Shallots
2 oz. Shiitake Mushrooms
1 Carrot
1 1/2 cup Water (add more as needed)
1/2 tsp. Kosher Salt
sliced Onions
Ground Black Pepper
Marinated Chicken
Cut 2 Chicken Breasts into thick slices. Cut 1 Carrot. Soak 2 oz. Shiitake Mushrooms until soften. Rinse the mushrooms then cut. Marinate the chicken, add in 2 tsp. minced Garlic, 2 tsp. chopped Shallots, 1 tsp. Oyster Sauce, 1 tsp. Sugar and Pinch of Ground Black Pepper. Mix well, set aside for 1 hour.
In the mean time, drain the mushroom and set aside. Boil the carrots and set aside.
Using a pan add in 2 Tbsp. Olive Oil, 2 tsp. minced Garlic, 2 tsp. chopped Shallots and saute for a few seconds. Add in the marinated Chicken. Add in the Shiitake Mushroom and Carrots. Add 1 1/2 cup Water (add more as needed). Add in 1/2 tsp. Kosher Salt and let it simmer until the chicken is cooked. Then add in the sliced Onions and some Ground Black Pepper. Mix well and serve.
