Coconut Rolls (Banh Mi Dua) Recipe
Fillings
1/2 cup Coconut Flakes
1/4 cup Sugar
2 Tbsp. unsalted Butter
Bread
2 1/2 cup Bread Flour
2 tsp. Active Yeast
1 Egg
1/2 tsp. Salt
3 Tbsp. unsalted Butter
1 cup Whole Milk
1/2 cup Sugar
Mix 1 cup Warm Milk with 2 tsp. Active Yeast, set aside for it to activate. Mix 2 1/2 cup Bread Flour, 1/2 cup Sugar, 1/2 tsp. Salt, 1 Egg, 3 Tbsp. melted unsalted Butter,
, and the active yeast with milk. Mix and knead into a dough. Cover with plastic wrap and place in a warm area for it to double in size.
To make the filling mix 1/2 cup Sweetened Coconut Flakes, 1/4 cup Sugar and 2 Tbsp. melted unsalted Butter. Mix well.
Once the dough has double in size, take it out and knead a little. Flatten it, spread the coconut mixture over the dough. Roll it up, cut into equal pieces.
Place into baking pan. Cover and let it double in size again. Then, spread some Egg Wash, place in oven at 350 degrees F. Bake for about 25 minutes or until golden.
Remove from oven and enjoy.
