Rau Cau Trai Dua (Coconut Jelly)




Rau Cau Trai Dua (Coconut Jelly)


Ingredients
1 Young Coconut
1 tsp. Agar Agar Powder
3 tsp. Sugar or to taste
1/3 cup Coconut Milk
1 tsp. Sugar
3/4 tsp. Agar Agar Powder

Cut the top of a Young Coconut open. Pour the Coconut Juice into a sauce pan. Using medium heat, add 1 tsp. Agar Agar Powder.
Add in 3 tsp. Sugar or to taste. Bring to a boil and remove from heat. Pour the mixture back into the Coconut. Leave in a cool area to set.
In another sauce pan add in 1/3 cup Coconut Milk. Using low heat, add 3/4 tsp. Agar Agar Powder.  Add 1 tsp. Sugar. Mix and bring to a simmer.  Remove from heat.
Once the jelly in the Coconut has set on the surface.  Pour in the Coconut Milk liquid on top. Put in the fridge for about 2 hours or longer to set.  After it sets, take out and serve.

  1. Coconut jelly? I don't think I've tried that before...but hey, there's a first for everything, right? Lol. :) It sounds like a delicious dessert!

  2. YES I love this! Every time I find it at Vietnamese sandwiches places in the fridge, I make sure to grab one :) The best part is the top, ugh so delicious. Thanks for the recipe, now I can make it at home!
