Crispy Fried Smelt Fish (Cá lòng tong chiên) Recipe

 


Ingredients

12 oz. Smelt Fish
1 tsp. Sugar
Pinch of Salt + 1/4 tsp
1 tsp. Chili Powder
1 tsp. Mushroom Seasoning
1/2 tsp. Ground Black Pepper
1 tsp. Turmeric Powder
2 Tbsp. Batter Flour or All Purpose Flour
1 tsp. minced Garlic
1 tsp. chopped Shallots
1 Tbsp. Vinegar
Frying Oil

Place 12 oz. Smelt Fish in a bowl.  Add in a Pinch of Salt and 1 Tbsp. Vinegar and mix well.  Then rinse the Fish.  Drain out the water and place in a large bowl to marinate.  Add in 1 tsp. chopped Shallots, 1 tsp. minced Garlic, 1 tsp. Turmeric Powder, 1 tsp. Chili Powder, 1 tsp. Sugar, 1/2 tsp. Ground Black Pepper, 1/4 tsp. Salt, 1 tsp. Mushroom Seasoning and mix.  Set aside for 30 minutes. 

After 30 minutes.  Add in 2 Tbsp. Batter Flour or All Purpose Flour.  Mix.  Have your Frying Oil ready.  Fry until golden.  Serve with fresh Vegetable/Herbs and Dipping Fish Sauce.  Enjoy with your meal.
