Sweet and Sour Squid (Mực chua ngọt ) Recipe

 


Ingredients
1 1/2 lb. Squid
Rice Wine
Salt
2 Tbsp. minced Garlic
2 Tbsp. chopped Shallots
1 tsp. Sugar
1/2 tsp. Salt
1 tsp. Mushroom Seasoning
1/2 tsp. Ground Black Pepper
1/2 tsp. Annatto Seed Oil
1 Bell Pepper
2 Cucumbers
2 Tomatoes
2 Tbsp. Olive Oil
2 Tbsp. minced Garlic
1/2 Onion
Pinch of Sugar, Salt and Ground Black Pepper
chopped Cilantro

Prepare the Squid by cleaning it with Rice Wine and Salt.  Scrub salt around 1 1/2 lb. Squid and pour some Rice Wine over it.  Then rinse with water.  Cut into strips and place in a large bowl. 

Marinate the squid by adding in 2 Tbsp. minced Garlic and 2 Tbsp. chopped Shallots. Add 1 tsp. Sugar. Add 1/2 tsp. Salt. Add 1 tsp. Mushroom Seasoning. Add 1/2 tsp. Ground Black Pepper. Add 1/2 tsp. Annatto Seed Oil.  Mix well and set aside for 15 minutes. 

Rinse 1 Bell Pepper, 2 Cucumbers and 2 Tomatoes.  Cut into bite size pieces and set aside. 

In a large pan add in 2 Tbsp. Olive Oil.  Add in 2 Tbsp. minced Garlic.  Sauté for a few seconds.  Add in the marinated squid. Add in 1/2 Onion cut into small pieces. Add in the Bell Pepper and Cucumber.  Season by add in a pinch of Sugar, Salt and Ground Black Pepper.  Mix. Add in the Tomato. Add in some chopped Cilantro. Mix and serve with meal.  Enjoy.
