Sweet and Sour Water Spinach (Rau muống chua ngọt) Recipe


Ingredients
1 lb. Water Spinach Stem  
1 tsp. Salt
1 tsp. Sugar
2 chopped Thai Chili Pepper
2 tsp. minced Garlic
2 Tbsp. Lime Juice
2 Tbsp. Sugar
2 Tbsp. Fish Sauce
Crushed Peanuts
chopped Thai Basil

Shorten the stem of 1 lb. Water Spinach in a large bowl.  Add in 1 tsp. Salt and 1 tsp. Sugar. Massage the salt and Sugar into the Water Spinach and let it sits for 15 minutes. 

In a bowl add in 2 chopped Thai Chili Pepper, 2 tsp. minced Garlic,  2 Tbsp. Lime Juice, 2 Tbsp. Sugar and 2 Tbsp. Fish Sauce. Mix well. 

Rinse the Water Spinach and drain out the water. Place in a large bowl.  Add in the dressing mixture.  Add in some Crushed Peanuts. Add in some chopped Thai Basil.  Mix and serve.. Enjoy.
