Pickled Cucumbers Recipe

 Pickled Cucumbers 

Ingredients
7 Cucumbers
Glass Jar
3 Tbsp. Salt
2 Tbsp. Brown Sugar
4 1/2 cups Water

Fill a pot with 4 1/2 cups Water. Bring to a simmer, add in 3 Tbsp. Salt and 2 Tbsp. Brown Sugar.  Mix well, bring to a boil and remove from stove.  Set aside to cool. 

Clean and let dry Glass Jars. 

Rinse and wash 7 Cucumbers.  Remove the center.  Rinse with water again and set in the sun to dry for about 20 minutes.  

Place the cucumbers in the jars.  Pour in the liquid mixture.  Set aside for 3-4 days or until it turns yellow green color, that’s when you know it’s ready. 

Enjoy as is or you can make it into quick side dishes. 

First side dish recipe you’ll need:

2 cups Pickled Cucumbers 
1 Tbsp. minced Garlic
1 Tbsp. chopped Shallots
1 tsp. Soy Sauce
1 1/2 tsp. Sugar
2 Tbsp. Olive Oil

Cut the pickled cucumbers into slices, you’ll need about 2 cups. Rinse and drain out the water. In a pan, add in 2 Tbsp. Olive Oil. Add 1 Tbsp. minced Garlic and 1 Tbsp. chopped Shallots.  Saute for a few seconds. Then add in 2 cups of Pickled Cucumbers.  Add 1 tsp. Soy Sauce. Add 1 1/2 tsp. Sugar.  Mix well and enjoy.

Second side dish recipe you’ll need:

2 cups Pickled Cucumber
1 Garlic
1 Thai Chili Pepper
1 Shallot
2 tsp. Sugar


Cut pickled cucumbers into slices (2 cups). Cut 1 Garlic, 1 Thai Chili Pepper and 1 Shallot into slices. Rinse and drain the pickled cucumbers. Place the pickled cucumbers in a bowl.  Add in the Garlic, Thai Chili Pepper and Shallots.  Add in 2 tsp. Sugar.  Mix well and enjoy.
