Banh Bot Loc (Vietnamese Shrimp and Pork Dumplings)


Banh Bot Loc (Vietnamese Shrimp and Pork Dumplings)
Ingredients
Dough:
2 bags Transparent Wet Rolls Flour
1/2 tsp. Salt
4 cups Cold Water
4 cups Warm Water
2 Tbsps. Oil
Fillings:
1 lb. Pork Belly
1 lb. Shrimp
Pinch of Salt
Some Water
1 1/2 Tbsp. Oil
2 Tbsps. minced Garlic
1 tsp. chopped Shallots
1/2 tsp. Salt
3/4 tsp. Sugar
Black Pepper
1 Tbsp. Annato Seed Oil
1 chopped Green Onion
Other Ingredients:
Banana Leaves
Fish Sauce
Chili Pepper
Oil
Cut 1 lb. Pork Belly.  About 1/2 inch thick and 1 inch long. Put in a bowl and set aside.
Devein 1 lb. Shrimp.  Cut the tail and leave the shell on.  Put in a bowl and set aside.
In a pan add a pinch of Salt and some water, use medium heat. Add in 1 lb. Pork. Mix it around and add in 1 Tbsp. minced Garlic.  Boil until the meat is cooked.
This should take you a few minutes. Once the meat is no longer pink. Drain out the water.
In a clean pan add 1 1/2 Tbsp. Oil.  Add 1 Tbsp. minced Garlic. Saute for a few seconds add in 1 tsp. chopped Shallots.
Continue to saute for a few more seconds.  Add in the 1 lb. Shrimp. Mix for about 1 minute.  Add in the 1 lb. Pork. Add 1/2 tsp. Salt.
Add 3/4 tsp. Sugar. Mix add some Black Pepper. Continue to mix.  Add 1 Tbsp. Annato Seed Oil for color.
Add 1 chopped Green Onion. Mix well and remove from heat.  Go through the bowl and cut the Shrimp in half.  It will be easier to wrap in the dumplings later on.
In a large mixing bowl, pour in 2 bags of Transparent Wet Rolls Flour.  Add 1/2 tsp. Salt. Mix well.
Add 4 cups cold Water. Let it sits for 10 minutes.  Then add in 4 cups warm water.  Mix well. 
Add 2 Tbsp. Oil.  Continue to mix. Using a non-stick pot. Pour in the mixture. Using medium heat, mix until it starts to thickens and becomes a dough.
Rinse 1 package of Banana Leaves.  To wrap each dumplings you need 2 layers of Banana leaf. 
Cut the big piece about 5 inches wide and 6 inches long. The smaller leaf should be around 5 inches wide and 4 inches long.
Place the smaller banana leaf in the center of the larger one.  Spread some oil on it.  Take a piece of the dough and place it onto the leaf.
Place a piece of pork and shrimp in the center.  Fold the to sides and then the ends. Place into steamer. Repeat until you used up all the dough and fillings.
Once you have 1 layer of dumplings on the steamer tray.  Steam for about 15 minutes or until cooked.  Remove from tray, let it cool.  Continue to steam the rest of the dumplings until finish.
Serve with plain fish sauce with chili pepper.
Unwrap the banana leaf and dip to enjoy.
