Mi Kho Tom Thit (Dry Egg Noodles with Shrimp and Pork)




Mi Kho Tom Thit (Dry Egg Noodles with Shrimp and Pork)


Ingredients:
Crispy Pork:
1/3 lb. Pork Belly or Bacon
Red Meat:
1/2 lb. Pork
2 tsp. Chinese Barbecued Seasoning
1 Tbsp. minced Garlic
Pinch of Salt and Sugar
Crab:
2 Imitation Crab Sticks
1 Tbsp. Oil
1 Tbsp. minced Garlic
Soup:
1 can Chicken Broth
1/2 cup Water
1/2 Daikon (cut into small pieces)
1 Carrot (cut into small pieces)
Other:
Egg Noodles
Sesame Oil
1 Tbsp. Oil
1 Tbsp. Sesame Oil
1 tsp. minced Garlic
Chopped Green Onions
4 Shrimp
Pinch of Sugar
1 tsp. Light Soy Sauce
Bean Sprouts
Chives
Dried Shallots
Cilantro
Lettuce

Cut 1/3 lb. Pork Belly or Bacon into thin pieces. Using medium heat, put into a pan.  Cook until it becomes crispy and remove from heat.
Scoop it into a bowl and set aside.
Boil 1/2 lb. Pork.  Boil until the outside is no longer pink.  Dump out the water and fill it up with water again.  This time boil until cooked.
Add in 2 tsp. Chinese Barbecued Seasoning. Add 1 Tbsp. minced Garlic. Add a pinch of Salt and Sugar. Let it simmer until it absorbed all the water or until cooked.
Then remove from heat, set aside to cool. After it has cooled down, cut into thin slices and set aside.
Cut 2 Imitation Crab Sticks, about 2 inches long. In a pan add 1 Tbsp. Oil.  Add 1 Tbsp. minced Garlic.
Sauté for a few seconds and add in the Imitation Crab. Sauté the crab for 2-3 minutes, remove from heat and set aside.
Unravel your Egg Noodles.  Have a pot of boiling water ready.  Put in the Egg Noodles, cook for a few minutes. Drain out the water, rinse with cold water.
Shuffle the noodles and add some Sesame Oil. In a stir-fry pan, add 1 Tbsp. Oil. Add 1 Tbsp. Sesame Oil. Add 1 tsp. minced Garlic.
Add some chopped Green Onions and 4 Shrimp then sauté for a few seconds. Add in the Egg Noodles.  Add a Pinch of Sugar. Add 1 tsp. Light Soy Sauce.
Mix well. Add in the sautéed Imitation Crab. Give a quick mix and set aside.
In a small pot, add 1 can Chicken Broth, 1/2 cup Water, 1/2 Daikon, and 1 Carrot.  Bring to a boil, add in some chopped Green Onions and Black Pepper.  Season to your taste.
Let simmer until ready to serve. 
To assemble, add some Dry Egg Noodles into bowl.  Place some Shrimp and Imitation Crab on top. Add some Bean Sprouts, Chives that has been cut about 2 inches long,
and Lettuce. Sprinkle some of the crispy Pork and Dried Shallots into bowl.
Place two slices of Pork on top.
Pour some of the soup into a small bowl.  The Carrot and Daikon should be remove and thrown away. Add some Chives and Cilantro.
Prepare a small dish of Soy Sauce mix with Chili Hot Pepper Sauce.
Place both soup and hot soy sauce next to your bowl of Dry Egg Noodles.  Enjoy your bowl of Dry Egg Noodles with a small bowl of soup on the side.
You can also use this recipe to make a simple version of Egg Noodle Soup.  Simply assemble the bowl and add in the soup.
