Chicken Feet with Black Bean Sauce (Chan Ga Nau Tuong Den)




Chicken Feet with Black Bean Sauce (Chan Ga Nau Tuong Den)


Ingredients:
8 Chicken Feet
2 Tbsp. Black Bean Sauce
1 Tbsp. Salt
1 tsp. Sugar
2 Tbsp. Tapioca Starch
1/2 cup Water
2 Tbsp. minced Garlic
1 Tbsp. Dark Soy Sauce
1 Tbsp. Oyster Sauce
Some slices Ginger
1 Tbsp. Oil
2 cup Water
1/2 Tbsp. Hoisin Sauce
Some chopped Green Onions
Frying Oil
Black Pepper


Wash and rinse the Chicken Feet. Let it air dry.  Cut the nails off the feet.
Now, put in the fryer and fry the Chicken Feet. When it's slightly brown, remove from oil.  Put it in a bowl of cold water.
Cut a few slices of Ginger and set aside. In a pot, add 1 Tbsp. Oil.  Add in the Ginger and 2 Tbsp. minced Garlic.  Sauté for a few seconds.
Add 2 cups Water.  Add in the Chicken Feet. Add 1 Tbsp. Dark Soy Sauce. Add 1 Tbsp. Oyster Sauce. Add 2 Tbsp. Black Bean Sauce.
Add 1 Tbsp. Salt. Add 1 tsp. Sugar.  Add 1/2 Tbsp. Hoisin Sauce. Mix well.  Cover with a lid and let it simmer for about 45 minutes.
In a small bowl, mix 2 Tbsp. Tapioca Starch and 1/2 cup Water. Mix well. After 45 minutes add into the pot.  Continue to let it simmer for 15 minutes.  Then add in some chopped Green Onions and Black Pepper and serve.
