Xoi Vo (Mung Bean Sticky Rice)




Xoi Vo (Mung Bean Sticky Rice)


Ingredients
2 cup Mung Bean
1 cup Sweet Rice
Banana Leaves
3/4 tsp. Salt
3 Tbsp. Coconut Milk Powder
2 Tbsp. Sugar

Rinse 2 cups Mung Bean a few times. Let it soak in water for about 4 hours.  After 4 hours, rinse it one more time and drain out the water. 
Add 3/4 tsp. Salt, mix well. Place 2 layers of Banana Leaves in steamer.  Pour in the Mung Bean.  Let it steam until the Mung Bean is really dry, it takes about 20 minutes. 
Put in a bowl, use a pestle and pound on the Mung Bean.  Once the it has broken down, mix it up a bit and set aside.
Soak 1 cup Sweet Rice overnight.  Rinse and drain out the water. Let it air dry for 15 minutes. After 15 minutes, pour the Sweet Rice into a large bowl.  Add in 3 Tbsp. of Coconut Milk Powder.
Mix well. Now scoop some of the Mung Bean and mix it into the Sweet Rice.  Save about half of the Mung Bean in a bowl.
Place 2 layers of Banana Leaves in steamer.  Pour in the Sweet Rice.  Steam for about 30 minutes.  Try not to get any water onto the Sticky Rice when you open the steamer lid.
After 30 minutes, remove from steamer.  Pour it onto a cookie sheet or a pan, big enough so that you can spread out the Sticky Rice. Sprinkle 2 Tbsp. Sugar. Then add in the rest of the Mung Bean.
Mix well.  Scoop it back into steamer.  Steam for about 5 minutes.  After 5 minutes, remove from steamer and serve.
