Nem Nuong (Vietnamese Grilled Pork Meatballs/Patties)


Ingredients
1 lb. Pork
5 sliced Shallots
4 minced Garlic Cloves
2 Tbsp. Tapioca Starch
1 Tbsp. Roast Rice Powder
1/2 tsp. White Pepper
1 tsp. Salt
1 tsp. Sugar
1 Tbsp. Fish sauce
2 oz. Pork Fat or 1 Tbsp. Olive Oil
Fresh Herbs
Dipping Fish Sauce
Crushed Roast Peanuts
Skewers (optional)


Cut 1 lb. Pork into small slices.  You want the meat to have some fat on it. If you are using meat that does not have fat, remember to add in 1 Tbsp. Olive Oil.
To marinate, add 5 sliced Shallots. Add 4 minced Garlic Cloves. Add 2 Tbsp. Tapioca Starch.
Add 1 Tbsp. Roast Rice Powder. Add 1/2 tsp. White Pepper.  Add 1 tsp. Salt.  Add 1 tsp. Sugar.  Add 1 Tbsp. Fish sauce.
Mix well.  Cover with plastic wrap.  Put in the fridge to marinate overnight. The next day, take it out of the fridge.
Using a food processor, blend the pork until it becomes a paste texture. Take a skewer, form a ball using the paste and put it onto the skewer.
Put about 5 meatballs on each skewer.  You can also shape the paste into a patty to grill. 
When you are done, place the meat on a griller.  Grill until cooked.  To serve, spread some scallion oil over the grilled Pork. 
Sprinkle some crushed Roast Peanuts on top.  Enjoy with Fresh Herbs and Dipping Fish Sauce.
