Mi Xao Cai Ngot Tom (Stir-fry Noodles with Choy Sum and Shrimp)




Mi Xao Cai Ngot Tom (Stir-fry Noodles with Choy Sum and Shrimp)


Ingredients
1 package Egg Noodles
1 bunch Choy Sum
1/2 tsp. Salt
1/2 tsp. Sugar
1 chopped Green Onion
7 Large Shrimp
1 Tbsp. minced Garlic
1 Tbsp. Oil
2 Tbsp. Sesame Oil
1 Tbsp. Oyster Sauce
1/8 tsp. Mushroom Seasoning
1 tsp. Sugar
1 tsp. Soy Sauce
1 Tbsp. Oil
1 tsp. Sesame Oil
1 Tbsp. minced Garlic
1/8 tsp. Mushroom Seasoning
1 Tbsp. Oyster Sauce
Black Pepper

Loosen 1 package of Egg Noodles.  Fill a pan with water, bring to a boil and add in the Egg Noodles.  Let it boil for 3-5 minutes.
Drain out and rinse with cold water. Cut, wash, and rinse 1 bunch of Choy Sum.  Separate the stem and the leaf. Drain out and set aside. Peel and devein 7 large shrimp, mince 2 Tbsp. Garlic, and chop 1 Green Onion.
In a pan add in some water.  Add 1/2 tsp. Salt and 1/2 tsp. Sugar. Add in the stem first, mix for about 1 minutes and add in the leaf part. 
Drain out and set aside. In another pan add in 1 Tbsp. Oil.  Add 1 Tbsp. minced Garlic.  Add some chopped Green Onion.
Saute for a few seconds. Add the Egg Noodles. Add 2 Tbsp. Sesame Oil. Mix well. Add 1 Tbsp. Oyster Sauce. Add 1/8 tsp. Mushroom Seasoning.
Add 1 tsp. Sugar. Add 1 tsp. Soy Sauce.  Mix until even. Remove from heat and set aside.
Add 1 Tbsp. Oil to pan. Add 1 tsp. Sesame Oil. Add 1 Tbsp. minced Garlic. Add some of the chopped Green Onions. Add in the Shrimp. Saute for a few minutes.
Add in the Choy Sum. Add 1/8 tsp. Mushroom Seasoning. Add 1 Tbsp. Oyster Sauce. Add in the rest of the chopped Green Onions. Mix and add in the Egg Noodles.
Add some Black Pepper.  Mix well and serve.
