Cha Chien Ga Va Heo (Vietnamese Fried Patties with Chicken and Pork)
Ingredients
1/2 cup crushed ice
1 Tbsp. Tapioca Starch
3/4 tsp. Sugar
1 tsp. Alsa Baking Powder
1/2 tsp. White Pepper
1 1/2 lb. Pork
1/2 lb. Chicken
2 tsp. minced Garlic
2 tsp. chopped Shallots
1/3 tsp. Kosher Salt
1/8 tsp. Mushroom Seasoning
3 tsp. Fish Sauce
Frying Oil
Cut 1 1/2 lb. Pork into small pieces. Put in a bowl and set aside. Cut 1/2 lb. Chicken into small pieces, put in a bowl and set aside.
In a large bowl combine the Pork and Chicken together. To marinate the meat, add 2 tsp. chopped Shallots. Add 2 tsp. minced Garlic. Add 1 Tbsp. Tapioca Starch.
Add 1 tsp. Alsa Baking Powder. Add 3/4 tsp. Sugar. Add 1/3 tsp. Kosher Salt. Add 1/8 tsp. Mushroom Seasoning. Add 3 tsp. Fish Sauce.
Add 1/2 tsp. White Pepper. Add 1/2 cup crushed Ice and mix. Cover with plastic wrap and let it marinate for 2 hours. Put in the freezer for 10 minutes. After 10 minutes, put into Food Processor.
Then blend. In a large frying pan set to 250 degrees F. and add in frying Oil. Spread some oil on a small plate and spoon. Scoop some of the paste onto the plate. Flatten into a patty.
Place on a larger plate, repeat until you use up all the paste. Drop each patty into frying oil. Fry about 2 at a time. Let it fry for about 20-25 minutes or until golden brown.
Place on paper towel. Let it cool and cut into slices to serve.
