Banh Kep (Coconut Pandan Waffle)

Ingredients
1 egg
3 1/2 Tbsp. Sugar or to taste
1 1/2 cup Coconut Milk
1 tsp. Baking Powder
1 cup All Purpose Flour
1/4 cup Rice Flour
1 tsp. Pandan Extract
Butter

Mix 1 cup All Purpose Flour and 1/4 cup Rice Flour together, then set it aside.
Beat 1 egg in a bowl. Add in 3 1/2 Tbsp. Sugar and whisk. Add in 1 tsp. Baking Powder and continue to whisk.
Mix in 1 1/2 cup Coconut Milk.  Then slowly add in the flour. Add in 1 tsp. Pandan Extract.
Mix well and let it sit for 10 minutes.
Put some Butter over your waffle maker.  Add the batter and let it cook.  Repeat until you finish using up all the batter.
