Xoi Sau Rieng (Sticky Rice Durian)

Xoi Sau Rieng (Sticky Rice Durian)

Ingredients
4 cups Sweet Rice (soaked overnight)
2 Large Durian
3/4 cup Mung Bean (soaked overnight)
1 cup Coconut Milk
3 Tbsp. Sugar
2 drops Yellow Food Coloring
Pinch of Salt
Banana Leaves

Rinse the Sweet Rice with water until it becomes clear.  Then let it soaks overnight.
Add 2 drops of Yellow Food Coloring in the Sweet Rice and mix.  Let it sits for 30 minutes.
After having your 3/4 cup Mung Bean soaked overnight.  Rinse it two times. Add enough water that it covers the Mung Bean.
Add a pinch of Salt and cook on medium heat.  Before the water absorbed all the way.  Mix the Mung Bean until it becomes a paste.
Then put in a bowl and set aside.
Take 1 cup Coconut Milk add 3 Tbsp. Sugar.  Mix well and set aside.
Drain out the water from the Sweet Rice.  Let it dry for a few minutes. Layout 2 layers of Banana Leaves in the steamer. 
Pour the Sweet Rice in the steamer. 
Steam for 30 minutes and drizzle the Coconut mixture over the Sweet Rice every 10 minutes.
Every time you open to add in the Coconut mixture remember to mix the Sweet Rice or else it will not cook evenly. Do this three times.
Now take out your Durian.  Remove the seed.  Then put it in with the Mung Bean paste and mix well.  Once you are done steaming the Sweet Rice for 30 minutes. 
Take it off the steamer.  Mix the Durian/Mung Bean paste in with the Sweet Rice.  Then put it on the steamer again and steam for another 5 minutes.
