Luffa with Chives Soup (Canh Muop He)
2 Luffas (medium size)
1/2 lb. Chives
3 Garlic Clovers
chopped Green Onions
Some Dried Shrimp (Optional)
1 Tbsp. Oil
4 1/2 cups Water
1/4 tsp. Sugar
1/2 tsp. Salt
1 tsp. Fish Sauce
Dash of Black Pepper
Peel, wash, and cut the Luffas. Wash the Chives and cut about 2 inches long. Mince the Shrimp and Garlic. Then chop the Green Onion.
Now you should have the Luffas and Chives cut, minced Shrimp and Garlic, and chopped Green Onion. This is optional, can add Dried Shrimp. Remember to soaked them in water for 4 hrs.
In a pot add in 1 Tbsp. Oil, minced Garlic, Dried Shrimp, and minced Shrimp. Sauté until the Shrimp turns pink. Then pour in 4 1/2 cups Water.
Bring to a boil and add in the Luffas. Let it simmers for about 5 minutes. Add in 1/4 tsp. Sugar, 1/2 tsp. Salt, and 1 tsp. Fish Sauce.
Let it simmers for a few more minutes. Now add in the Chives. Stir and add in the chopped Green Onions. Add in a dash of Black Pepper and you are done.
