Canh Kho Qua Nau Tom (Bitter Melon Soup with Shrimp)

Canh Kho Qua Nau Tom (Bitter Melon Soup with Shrimp)

1 large Bitter Melon
4-5 Shrimp
3 Garlic Clovers
3 Green Onions
1 Tbsp. Oil
5 cups Water
1/4 tsp. Mushroom Seasoning
1/2 tsp. Salt
1 tsp. Sugar
1 tsp. Fish Sauce
Black Pepper

Cut the Bitter Melon in half.  Remove the inside.  Then cut it into slices.
Put in a small basket and sprinkle some Salt
Mix and let it sits for 10 minutes.  Then rinse with water.  Drain the water out as much as you can. 
Now mince 3 Garlic Clovers.  Chop 3 Green Onions.  Chop 4 Shrimp.
In a pot add 1 Tbsp. Oil.  Add in the minced Garlic.  Saute until slightly brown.  Add in the Shrimp.
Stir until Shrimp turns pink.  Then add in 5 cups water.  Bring to a boil. Add in the Bitter Melon.
Let it simmers for 3 minutes. Add in 1/4 tsp. Mushroom Seasoning, 1/2 tsp. Salt, 1 tsp. Sugar, and 1 tsp. Fish Sauce.
Let it simmers for a few minutes.  Then add in the chopped Green Onions and a dash of Black Pepper.
