Sticky Rice Cake with Coconut (Banh It Nhan Dua)


Sticky Rice Cake with Coconut (Banh It Nhan Dua)

Ingredients:
1/2 cup Brown Sugar
1 cup White Sugar
1/2 cup Water
Glutinous Flour
3 tbs Crushed Peanuts
Brown Coconut (3-4 cups of Coconut Flakes)
1 tsp Vanilla Extract
Pinch of Salt
1 package Banana Leaves
4-5 cups Pandan Extract
Oil

Fillings:
Step 1
Scrape the Coconut until you have about 3-4 cups of Coconut Flakes.

Step 2
Using low heat, add 1/2 cup Brown Sugar into pan.
Then add in 1 cup White Sugar and 1/2 cup Water.

Step 3
Stir until the Sugar melts.  Then add in the Coconut Flakes.
Mix and then add in the crushed Peanuts.
Add in a Pinch of Salt and 1 tsp of Vanilla Extract.

Step 4
Stir until it caramelized, remove from heat and set aside.

Step 5
Once it has cool, roll into balls.

Dough:
Step 1
To make the dough you need to have about 4-5 cups of Pandan Extract. 
To make the Pandan Extract, put 1 package of Pandan Leaves and 5-6 cups of water into a blender.  They strain it out to get the Pandan liquid.

Step 2
Put 1 bag of Glutinous Flour in a bowl.  Add in the Pandan Extract little by little until it has a doughy texture. 
Add in enough Pandan Extract so the dough is not too dry or too sticky.

Making the Sticky Rice Cake
Because our Banana Leaves was kind of too stiff.  We had to dip it in hot water.  If your Banana Leaves is not stiff you can skip this step.
Divide the dough into equal pieces. Take one piece of the dough, flatten it and put in the fillings.  Then roll it into a round ball.  Spread a little bit of oil on it.
Using the Banana Leaves make a cone shape.  Put in the ball, fold the two sides in ward and over.
Steam for 20-25 minutes or until it is cooked.
